Ingredients:
For the Chili:
• 🥩 1/2 lb (225g) ground beef or turkey (or plant-based alternative)
• 🧅 1/2 small onion, diced
• 🧄 2 cloves garlic, minced
• 🌶️ 1/2 teaspoon chili powder
• 🌿 1/2 teaspoon cumin
• 🌿 1/4 teaspoon smoked paprika
• 🧂 Salt and pepper to taste
• 🍅 1/2 cup diced tomatoes (canned or fresh)
• 🥫 1/2 cup kidney beans, drained and rinsed
• 🥫 1/2 cup black beans, drained and rinsed
• 🥄 1 tablespoon tomato paste
• 🫒 1 tablespoon olive oil
• 💧 1/2 cup beef or vegetable broth
For Toppings:
• 🧀 Shredded cheddar cheese
• 🥑 Sliced avocado
• 🌿 Fresh cilantro
• 🍋 Lime wedges
• 🍶 Sour cream or Greek yogurt

Instructions:
1. Sauté the Aromatics:
o Set the Instant Pot to Sauté mode.
o Add olive oil, then sauté the onion and garlic for about 2 minutes until soft and fragrant.
o Add the ground beef or turkey and cook until browned, breaking it into crumbles.

2. Add Spices and Ingredients:
o Stir in chili powder, cumin, smoked paprika, salt, and pepper. Cook for 1 minute.
o Add tomato paste, diced tomatoes, kidney beans, black beans, and broth. Stir well to combine.

3. Pressure Cook:
o Close the Instant Pot lid and set the valve to Sealing.
o Cook on Manual/Pressure Cook for 10 minutes.
o Allow a 10-minute natural pressure release, then carefully switch the valve to Venting to release any remaining pressure.

o Open the lid and give the chili a good stir. Taste and adjust seasoning if needed.
