Ingredients:
For the Lentil Filling:

Instructions:
1. Make the Mashed Potato Topping:
o Boil potatoes in salted water until fork-tender (10–12 minutes).
o Drain and mash the potatoes with plant-based butter, milk, salt, and pepper until smooth and creamy.
o Set aside.

2. Cook the Lentil Filling:
o Heat olive oil in a skillet over medium heat.
o Add onion, carrots, and garlic, and sauté for 4–5 minutes until softened.
o Stir in lentils, tomato paste, thyme, rosemary, peas, and corn.
o Pour in the vegetable broth and simmer for 5–7 minutes until the mixture thickens.
o Season with salt and pepper to taste.
