Ingredients:
For the Rice:
β’ π 1 cup jasmine rice (or basmati rice)
β’ π§ 2 cups water
β’ π§ Pinch of salt
For the Tofu:
β’ π₯’ 200g (7 oz) firm tofu, cubed
β’ π« 1 tablespoon olive oil
β’ π§ Salt and pepper, to taste
For the Coconut Curry Sauce:
β’ π§ 2 cloves garlic, minced

1/2 onion, finely chopped
β’ π₯ 1/2 cup carrots, thinly sliced
β’ π« 1/2 cup bell pepper, thinly sliced
β’ π 1/2 cup spinach
β’ π₯₯ 1 cup coconut milk (full-fat)
β’ π 1 tablespoon curry powder
β’ πΆοΈ 1/2 teaspoon chili flakes (optional)
β’ π₯ 1 tablespoon soy sauce
β’ π Juice of 1/2 lime
β’ π« 1 tablespoon olive oil
For Garnish:
β’ πΏ Fresh cilantro, chopped
β’ π₯ Lime wedges
β’ π₯ Sesame seeds

Instructions:
1. Cook the Rice:
o Rinse 1 cup of rice under cold water.
o In a pot, combine rice, 2 cups of water, and a pinch of salt.
o Bring to a boil, then reduce heat, cover, and simmer for 15 minutes.
o Fluff the rice with a fork and set aside.
2. Prepare the Tofu:
o Pat tofu cubes dry with a paper towel.
o Heat olive oil in a skillet over medium heat.
o Cook tofu cubes until golden and crispy on all sides (5β7 minutes).
o Season with salt and pepper.
o Remove and set aside.
3. Make the Coconut Curry Sauce:
o In the same skillet, heat olive oil over medium heat.
o Add onion and garlic; sautΓ© for 2 minutes.
o Stir in carrots and bell pepper; cook for another 3 minutes.
o Pour in the coconut milk, add curry powder, soy sauce, and chili flakes.
o Simmer for 5 minutes until sauce thickens slightly.
o Add spinach and let it wilt into the sauce.
o Stir in lime juice.
4. Assemble the Bowls:
o Divide the rice evenly between two bowls.
o Top with crispy tofu and coconut curry vegetables.
o Drizzle extra curry sauce over the top.
5. Garnish and Serve:
o Sprinkle with cilantro, sesame seeds, and add a wedge of lime on the side.
