This Sushi Rice Bowl is an easy, deconstructed version of traditional sushi. It combines seasoned sushi rice, fresh vegetables, and your choice of protein, all topped with classic sushi garnishes. Perfect for a quick yet impressive meal!

Ingredients:
For the Sushi Rice:
β’ π 1 cup sushi rice
β’ π§ 1 1/4 cups water
β’ π 2 tablespoons rice vinegar
β’ π₯ 1 tablespoon sugar
β’ π§ 1/2 teaspoon salt
For the Toppings:
β’ π 100g (3.5 oz) sushi-grade salmon or tuna, diced (optional)
β’ π€ 100g (3.5 oz) cooked shrimp, peeled and deveined (optional)
β’ π₯ 1/2 avocado, sliced
β’ π₯ 1/2 cucumber, julienned
β’ π₯ 1/2 carrot, julienned
β’ π₯ 1 egg, scrambled and sliced thin (optional)
β’ π₯’ 1 sheet nori (seaweed), cut into thin strips
β’ π₯ 1 tablespoon sesame seeds (black or white)
For the Sauce (Optional):
β’ πΆ 2 tablespoons soy sauce
β’ π₯ 1 tablespoon mayonnaise
β’ πΆοΈ 1 teaspoon sriracha
For Garnish:
β’ π§ 1 green onion, chopped
β’ π₯ Pickled ginger (optional)
β’ π Lime wedges

Instructions:
1. Cook the Sushi Rice:
o Rinse the sushi rice under cold water until the water runs clear.
o Combine rice and water in a pot and bring to a boil. Reduce heat, cover, and simmer for 15 minutes.
o Remove from heat and let it sit, covered, for 10 minutes.
o In a small bowl, mix rice vinegar, sugar, and salt until dissolved.
o Gently fold the vinegar mixture into the rice and let it cool slightly.
2. Prepare the Toppings:
o Dice the sushi-grade salmon or tuna (if using).
o Julienne the carrot and cucumber.
o Slice the avocado and scrambled egg thinly.
o Toast nori strips lightly if desired.
3. Assemble the Bowls:
o Divide the sushi rice evenly between two bowls.
o Arrange salmon/tuna, shrimp, avocado, carrot, cucumber, and egg on top.
o Sprinkle with nori strips and sesame seeds.
4. Make the Sauce (Optional):
o Mix soy sauce, mayonnaise, and sriracha in a small bowl.
o Drizzle over the bowl or serve on the side.
5. Garnish and Serve:
o Top with green onion, pickled ginger, and a lime wedge.
