Ingredients:
For the Jambalaya:
• 🍚 1 cup long-grain white rice
• 🫒 2 tablespoons olive oil
• 🍗 100g (3.5 oz) chicken breast, diced
• 🥩 100g (3.5 oz) smoked sausage (like Andouille), sliced
• 🍤 100g (3.5 oz) shrimp, peeled and deveined
• 🧄 2 cloves garlic, minced
• 🧅 1/2 onion, diced
• 🌶️ 1/2 green bell pepper, diced
• 🥕 1/2 cup celery, diced
• 🍅 1/2 cup canned diced tomatoes
• 💧 2 cups chicken broth
• 🌶️ 1 teaspoon Cajun seasoning
• 🥄 1/2 teaspoon paprika
• 🥄 1/4 teaspoon cayenne pepper (optional, for extra heat)
• 🧂 Salt and pepper, to taste
For Garnish:
• 🌿 Fresh parsley, chopped
• 🍋 Lemon wedges
• 🧄 Green onions, chopped

Instructions:
1. Cook the Chicken and Sausage:
o Heat 1 tablespoon olive oil in a large skillet over medium heat.
o Add chicken and sausage, season lightly with Cajun seasoning, and cook until browned (5 minutes).
o Remove from the skillet and set aside.
2. Cook the Vegetables:
o In the same skillet, add the remaining 1 tablespoon olive oil.
o Sauté onion, garlic, celery, and bell pepper until softened (3–4 minutes).
3. Add the Rice and Broth:
o Stir in the rice, diced tomatoes, Cajun seasoning, paprika, and cayenne pepper.
o Pour in the chicken broth and stir well.
o Bring to a boil, then reduce heat, cover, and let simmer for 15 minutes.
4. Add the Chicken, Sausage, and Shrimp:
o Stir in the cooked chicken and sausage.
o Add the shrimp and let everything cook together for an additional 5–7 minutes, or until the shrimp turn pink and the rice is fully cooked.
5. Adjust Seasoning:
o Taste and adjust seasoning with salt and pepper if needed.
6. Garnish and Serve:
o Serve the jambalaya in bowls.
o Garnish with fresh parsley, green onions, and a lemon wedge on the side.
