
Teriyaki Chicken Rice Bowl

Ingredients:
• 🍗 200g (7 oz) chicken breast or thighs, diced into bite-sized pieces
• 🍚 1 cup jasmine or basmati rice
• 🥦 1/2 cup broccoli florets
• 🥕 1/2 cup carrot, thinly sliced
• 🫑 1/4 cup bell pepper, thinly sliced
• 🧄 2 cloves garlic, minced
• 🫒 1 tablespoon olive oil
For the Teriyaki Sauce:
• 🥢 1/4 cup soy sauce
• 🍯 2 tablespoons honey
• 🥄 1 tablespoon brown sugar
• 🥃 1 tablespoon rice vinegar
• 🌽 1 teaspoon cornstarch, mixed with 1 tablespoon water
• 🌿 1 teaspoon grated ginger
Garnishes:
• 🌱 Sliced green onions
• 🥄 Sesame seeds

Instructions:
1. Cook the Rice:
o Cook 1 cup of rice according to package instructions.
o Set aside and keep warm.
2. Make the Teriyaki Sauce:
o In a small bowl, mix soy sauce, honey, brown sugar, rice vinegar, cornstarch slurry, and grated ginger.
o Stir well and set aside.
3. Cook the Chicken:
o Heat olive oil in a skillet over medium heat.
o Add chicken pieces and cook for 4–5 minutes until browned and cooked through.
o Add garlic and cook for 1 minute.
o Pour in the teriyaki sauce and simmer for 2–3 minutes until the sauce thickens and coats the chicken.
4. Stir-Fry Vegetables:
o In a separate skillet, lightly sauté broccoli, carrots, and bell peppers in olive oil for 3–4 minutes until just tender.
5. Assemble the Bowl:
o Divide the rice evenly between two bowls.
o Top with teriyaki chicken and stir-fried vegetables.
o Drizzle extra sauce over the top.
6. Garnish and Serve:
o Sprinkle with sliced green onions and sesame seeds.
