Ingredients:
For the Tofu:
• 🍃 200g (7 oz) firm tofu, cubed
• 🫒 1 tablespoon olive oil or sesame oil
• 🥄 1 tablespoon cornstarch
• 🧂 Pinch of salt and pepper
For the Vegetables:
• 🥦 1/2 cup broccoli florets
• 🥕 1/2 cup carrots, julienned
• 🌶️ 1/2 red bell pepper, sliced
• 🧄 2 cloves garlic, minced
• 🫑 1/4 cup snap peas
• 🧅 2 green onions, chopped
For the Stir-Fry Sauce:
• 🥢 2 tablespoons soy sauce
• 🍯 1 tablespoon maple syrup or agave nectar
• 🥄 1 teaspoon rice vinegar
• 🌿 1/2 teaspoon grated ginger
• 🌶️ 1/4 teaspoon chili flakes (optional)
• 💧 2 tablespoons water
For Serving:
• 🍚 1 cup cooked jasmine rice or brown rice

Instructions:
1. Prepare the Tofu:
o Pat the tofu cubes dry with paper towels.
o Toss them with cornstarch, salt, and pepper.
o Heat 1 tablespoon olive oil in a skillet over medium heat.
o Cook the tofu cubes until golden and crispy on all sides (5–7 minutes).
o Remove from the skillet and set aside.

2. Cook the Vegetables:
o In the same skillet, add a little more oil if needed.
o Add broccoli, carrots, snap peas, and bell pepper. Stir-fry for 3–4 minutes until slightly tender but still crisp.
o Add garlic and green onions, and stir-fry for another 1 minute.

o In a small bowl, whisk together:
• Soy sauce
• Maple syrup
• Rice vinegar
• Ginger
• Chili flakes (if using)
• Water
o Pour the sauce over the vegetables and stir well.
